At least one microorganism is selected for the fermentation from an under- or over-fermented saccharomyces cerevisiae source, saccharomyces carisbergensis, saccharomyces diastaticus and brettanomyces intermedius. The carbohydrate is malted corn or raw fruit with malted corn.
